Cheese
Rosettes, slices and portions for the board.
Pick the slicer by the cheese. For even slices off a chilled block of cheddar or gouda, use the Wire Cheese Slicer with its thickness adjuster. For neat portions of firm block cheese or chilled butter, use the Cheese Slicer Board with its guided lever. For Tête de Moine rosettes, use the Cheese Curler.

Which cheese slicer for which cheese
The wire slicer is a handheld frame with a stainless steel wire and a smooth roller, and two spare wires come in the box. The slicer board brings a stainless blade down on a fixed path over a steel or a wood base, and a lock holds the arm between uses. Hand wash it with mild soap and dry it right away.
The curler is a different tool: press a small semi-hard wheel onto the center pin of the 8.4 in beech board, turn the handle, and thin ribbons fold into rosettes. It is designed for Tête de Moine and Petit Basque; aged, very hard cheese gives mixed results (some buyers get curls, others flakes), and soft cheese smears. The dome version adds a clear 7.5 in lid for a half-shaved wheel.

Common questions
Which cheese works in the curler?
Semi-hard cheese. It is designed for Tête de Moine and Petit Basque. Aged, very hard cheese gives mixed results: some buyers get curls, others flakes. Soft cheese smears.
Why does my cheese crumble in the curler?
The cheese is too hard or too cold, the rind is still on top, or you are pressing too hard. Let the cheese sit out for 10–15 minutes and let the blade skim the surface.
Are spare wires included with the wire slicer?
Yes, two spare wires are included. If they are missing from your box, contact the seller through your Amazon order.
How do I set the slice thickness?
Loosen the screw on each side of the roller, move the roller to the thickness you want, then tighten both firmly; a screwdriver helps, so the roller does not slip mid-slice. Then roll it across a chilled block of cheddar or gouda.
Can the slicer board cut butter?
Yes. It portions chilled butter sticks into even slices, the same way it cuts block cheese.
How do I clean the slicer board?
Hand wash it with mild soap, dry it right away, then lock the arm and store it.
