The pyramid surface holds it up on points, so the fat drains into the channels between them and air moves under the whole piece. Meat browns on the bottom instead of steaming. It is 100% food-grade silicone, non-stick without oil, 16 × 11.42 in to fit a standard sheet pan. Off the tray it doubles as a trivet, a pot holder or a drying mat.
